Greek Yogurt is one of those staple items we have in our fridge all the time. There is so much you can do with Greek Yogurt and it is healthy for you. I have to be honest and say I have never been a fan of yogurt but since we started “clean eating” we have embraced it and found ways to enjoy it. The amazing thing is nobody will ever know they are eating yogurt. 

I want to begin by sharing a secret with you and letting you know that my favorite greek yogurt is Fage. The reason I use this yogurt is because it is the one with the least amount of sour taste.  I have tried many brands and this is the ONLY one that passes the test. We used greek yogurt in place of sour cream and in lots of recipes so I definitely don’t want a sour taste.

We love eating desert in our home and chocolate is definitely on top of the list.  The fun part is that we are able to eat and enjoy chocolate and reap its benefits.  Cocoa Powder is an amazing food with many health benefits. Did you see our Chocolate Lollipop Recipe?  This is a fun and delicious recipe. 

In addition to using Cocoa Powder, we also use Fit Miss Chocolate Delight Protein Powder to create smoothies, popsicles, and even today’s pudding. We also use Swerve’s Confectioner’s Sugar and Nature’s Hollow Honey Substitute. If you aren’t diabetic, then you can use regular honey. My blood sugar easily spikes and so this honey substitute is perfect for me.

Did you notice that awesome looking cup that is holding the pudding?  That is made from chocolate.  Yes, yummy yummy!!!! To create the cup, I place foil liners in my cupcake tin and melted 1 cup of Lilly’s Dark Chocolate Premium Baking Chips that are sweetened with Stevia.  The taste of Dark Chocolate is still growing on me so although the cup is made from dark chocolate the pudding isn’t so the flavors will mix and it won’t be so strong.

This delicious dessert needed a finishing touch of craftiness and what else but Add a Little Dazzle Craft Metal Sheets. For the past two months Dazzling Diva Designer Lydia Evans, has been sharing her amazing technique of hand embossing through craft metal sheets at the Add a Little Dazzle Virtual Club.  I finally decided to give this technique a try and the finishing look is AMAZING!!!

This amazing butterfly is the Fancy Butterfly Die.  The detail in this die cut is amazing and when die cut with Perfect Peacock and Pucker Me Pink Craft Metal Sheet it is absolutely gorgeous.  In addition, you will need Double-Sided Adhesive Sheets and the Embossing Tool Kit

Chocolate Delight Greek Yogurt Pudding

  1. 16 ozs. Fage Greek Yogurt
  2. 2 scoops Fit Miss Chocolate Protein Powder
  3. 1 teaspoon unsweeted Cocoa Powder
  4. 6 tablespoons Swerve Confectioner's Sugar
  5. 3 tablespoon Nature's Hollow Honey Substitute
  6. 1 1/2 teaspoon Vanilla Extract
Chocolate Dessert Cups
  1. 1 cup Lilly's Dark Chocolate Premium Baking Chips
Instructions
  1. Place Greek Yogurt in a bowl,add protein powder, and unsweetened Cocoa Powder. Mix with the hand blender until completely blended.
  2. Add sugar, honey and Vanilla Extract and mix again with the hand blender. If needed, add more sweetener.
  3. Line muffin pan with foil cupcake liners. Then, melt one cup of chocolate chips in microwave in 30 second intervals. Mix with a rubber spatula.
  4. Once the chocolate is melted, take a teaspoon of melted chocolate and spread it with the back of your spoon until you have a nice thick coat and you can't see through the chocolate.
  5. Then, add more chocolate and spread it up the sides of the liner with the back of the spoon until it is completely coated.
  6. Once you have coated all your liners, place them in the freezer for 30 minutes.
  7. Remove them and if needed add another layer of chocolate making sure there are no gaps.
  8. Once the chocolate has dried, peel off the liner and place the pudding in the chocolate cup.
  9. Then, add the metal embossed butterfly topper.

  3. I love the butterflies and was able to order the die to make my own! I have all of the rest of the supplies, so I can start as soon as the die gets here! The pudding looks so tempting! And I love the little chocolate cups!!

      We had it for dinner tonight and it was absolutely delicious. The pudding offset the taste of the dark chocolate shell. It was so filling and my kids who are picky loved it. Hugs. Monica
